At Corbett The Baagh, we are proud of the environment we operate in and we are very mindful of the sensitivities of operating in such remote locations. As a resort we have tremendous respect and sense of owning for the Kumaon region and its people, who form a very large part of our team. Traditionally the Kumauni’s are hardworking, honest and their tales of  bravery over the centuries in the battlefield are well-known.
The Kumauni’s are equally adept in the craft of cookery. Countless head chefs across hotels are from this region and that gives a hint of what the average Kumauni is capable of dishing out. This prowess in the professional kitchen hasn’t however done any wonders to Kumauni Cuisine in itself and it lies largely undiscovered due to lack of exposure and awareness. At Corbett The Baagh, we make it a point to expose you to this hidden treasure of the Kumaon region.
The Kumauni cuisine is simple and essentially consists of only what is locally grown in the Himalayan slopes. Step-farming provides avenues for small time cultivation, due to which most of the agriculture here is organic, making it more nutritious and flavoursome. Some of the best ‘Basmati’ rice in the world grows in this belt and is famous for its wholesome aroma. The ‘Rajmah’ beans grown here is also a must have.
Some of the other unique ingredients of this region are Bhatt Ki dal (Black Soya Beans) and Gahat Ki Dal (Horse Gram). The lentils are very high on protein content and are known to have many medicinal properties.

Some of the notable dishes of Kumauni Cuisine are Aaloo Gutukay, Dubke, Kaapa, Thathwani, Chudkani, Sisunaak Saag, Bhang ki Chutney & Mooli Ka Thechua. Hara Namak & Sanaa Hua Nimbu are some famous side dishes that add to the flavour of main course meals. The mouth-watering desserts of the region are Singal-Puha, Jhangora ke Kheer, Singodi and Baal-Mithai are some of the highlights.
